@wilkes1977, my sweet yellow cornbread is corn meal, egg, milk, oil, and sugar.

Sweet balances spicy, so it's the same logic as the Cincinnati chili that @hillbilly666 is talking about. You add a little sweet to offset the heat (or salt, which is more common locally).

I used to add bourbon, too! But in the last few years my tastes have changed, and all I have on hand is whiskey that's too expensive to pour in a pan I have a bunch of dark beer around that tasted like crap, though (Yuengling and Hershey's Chocolate Porter ), so that might be a good way to get rid of those bottles.

Everyone's taste is different but I have added some molasses to mine also I have tried liquid smoke and some bourbon as well. Some love it hot some like it mild I try to accommodate a happy medium. I do like using bush's beans.

Ground beef, onions, peppers, tomatoes and spices are my basic ingredients for chili. I am hooked on a semisweet pepper called mad hatter that I use often.

Interesting hillbilly, it definitely is different than I know but that's different areas and different things to try. I grew up on jiffy but when it came to grandmas cooking she would always say son you're not in the city you're going to eat country. One thing is for sure you can't beat grandma when cooking.

It's inspired by Cincinnati chili. Hence the chocolate and cinnamon.

Never heard of a chilli recipe like that hillbilly but everyone has different taste. JC your recipe sounds great but come one now sweet corn bread? That's jiffy pop. Corn bread should be made using a iron skillet and have hogs jaw,

Sounds good JC! I honestly kinda prefer Turkey or venison in my chili. My weeknight recipe is two ponds ground Turkey, browned. Then add a can of tomato paste stirred till combined with the Turkey and cook for about five minutes till it's starting to brown. Deglaze the pan with a couple ounces of Guinness and add two cans of beans. Usually pinto or red kidneys. Sometimes both. Then chili powder, dark chili powder smoked paprikain, garlic powder, cinnamon and whatever other spices are calling my name or whatever hot peppers I have around. Usually Thai birds eyes or habaneros. Then add in about a half a bar of dark chocolate and more Guinness. Stir, simmer till desired consistency and salt and pepper to taste. Serve with grated sharp cheddar cheese and sour cream. Sometimes I'll do it over yellow rice. I also sometimes use it as an opportunity to use whatever produce is in the fridge. I'll add squash, corn or some mushrooms?

Tonight was chili night

I actually use ground turkey, because I can't tell a difference in flavor but it's considerably healthier. Fry it up while chopping my baby bell peppers, then when the meat's done you add the seasoning, peppers, a can of Hanover Dark Red Kidney Beans, then two cans of Rotell tomatoes with habaneros.

Stir it up, then let it simmer covered for 10 minutes.

This time I chopped up a purple habanero to kick it up a notch for myself.

Sweet yellow cornbread goes great with it!

JC, Simply put, it is a quartered cabbage, cooked until tender in the liquid where the pork was prepared. I season with salt and red pepper.
