Crock Pot Pecan Pie

Classic pecan pie, but for a crock pot. Very easy to do, and no mess in the oven!

1 uncooked pie crust
3 eggs
1 cup sugar *
2/3 cup dark Karo syrup *
1 cup pecans, broken up
1/2 cup margarine, melted
1 teaspoon vanilla

* or, 1 cup of brown sugar and 2/3 cup of light Karo syrup

Use a crock pot liner, aluminum foil, or parchment paper on the inside of the pot! Otherwise, you won't be able to get the pie out too well.

Spray the inside of the pot with non stick cooking spray (Baker's Joy is the best). Place uncooked pie crust in the crock pot and press up the edges about 1/2 inch up the sides.

In a medium-mixing bowl, stir the remaining ingredients until well mixed. Pour on top of the pie crust. Cover and cook on HIGH for 2 to 3 hours.
